Trust me; you HAVE to make this keto cauliflower salad. Here are some of the reasons you're going to fall in love with this cauliflower salad:

  • It's like traditional potato salad. The combination of the cauliflower dressing and texture makes this similar to a traditional potato salad.
  • It fills you up. Because of the fat content and protein from the eggs, this cauliflower salad is super filling!
  • It's easy to store. You can keep this salad for several days in the fridge. Just keep it covered or in an airtight container, which will last for at least 3 days.
  • It's low in calories and carbs. Of course, the best part about this salad is that it's super low in net carbs. Each bowl of keto cauliflower salad contains only 135 calories and 6.6g net carbs.

I really wanted to like this recipe because I love cauliflower. But it is a flawed recipe. First, I would not boil the cauliflower. The texture and the added moisture made the whole thing mushy - even though I under boiled them. Keep them raw, the crunch is wonderful! Second, I personally would omit the cucumber. Again, it added too much moisture. If you really want to add them, I would remove the seeds first. I didn’t have any sour cream so I used Greek yogurt and the dressing was great. I will definitely make this again with those adjustments. And I may add some crumbled bacon to it as well.
