ingredients
- 10 ounces spinach (baby is best)
- 2 medium carrots, chopped
- 2 medium celery ribs, chopped
- 1 large onion, chopped
- 1 garlic clove, minced
- 4 cups vegetable broth
- 28 ounces canned diced tomatoes
- 2 leaves bay leaves
- 1 tablespoon dried basil
- 1 teaspoon dried oregano
- 1⁄2 teaspoon red pepper flakes, crushed

directions
- Place all ingredients in a slow cooker.
- Cover and cook on high for 5 hours.
- Remove bay leaves, stir and serve.

I go to Weight Watchers so I really appreciate this version of vegetable soup. When I make it I wind up throwing things in that I have left over. It is a wonderful soup. My husband takes it with him for his lunch each day. It's the best vegetable soup I've eaten.

All the good things in a soup. Easy to put together before work. Needs a zing though. More spice, add tabasco as someone else mentioned? I'll try again.

I placed all the ingredients in my Instant Pot on the soup broth setting. Released manually. Came out great!

Great base recipe. I sautéed the onion, carrots, and celery in a bit of olive oil before cooking. I also had some freshly roasted garlic on hand today so I used about 3 cloves of that instead of raw garlic. I only had fresh basil and oregano so in they went. I then added some extra salt and black pepper to add some needed flavor. It turned out great! I actually served this with pulled pork sandwiches for dinner and since I'm on a no carb kick I added my pork to my soup and it turned out to be an amazing decision!

This is a great basic soup. As someone else suggested, adding white or red kidney beans makes it more hardy. And if you want a little more zing to it add some Worcestershire Sauce to taste rather than more pepper. I substitute tomato juice for some of the liquid too.

Very good and more filling than I expected -- a definite plus -- served with cold cut sandwiches, but I think it will be wonderful for lunch just as it is! I added 1 zucchini, chopped and tarragon instead of basil. thanks for sharing!

Great soup, love the flavor! Barb- I know it is your pet peeve to review a recipe that you changed...but my changes were minimal, and didn't change the overall dish. I added a can of lentils (and added more seasonings to compensate) and used chicken broth instead of vegetable broth. I made this to go along with tuna melts for the family, it was a HUGE hit and they didn't even know they were eating so healthy and low-cal! Thanks for posting!

My husband and I moved to Tennessee from Pennsylvania in 2005. We absolutely love it here, especially being near the Smoky Mountains. My kids are grown and are out of the house. I am a nurse practitioner, work for Evercare, a division of United Healthcare, caring for elderly patients in nursing homes. My husband and I love the outdoors, and we especially enjoy hiking in the Smoky Mountains. I also enjoy doing Jazzercise as often as I can get there. We have 2 spoiled rotten kitties, Elizabeth and Harvey, and an equally spoiled rotten yellow lab, Hayley.
